On a global scale, we produce more food than we are able to consume. However, millions of people in the world go hungry every day. Nevertheless, we can tackle the issue by raising awareness and concentrating on food aid. The challenge is not only to feed the world, but above all to educate it. * Jean-François Archambault, founder of the organization The Chef Table, learned to cook with his mother when he was a young boy. During his studies in Hotel Management at the Quebec Tourism and Hotel Institute, he became aware that huge quantities of food were going to waste on a daily basis. The notion of salvaging the mountains of food thrown away by restaurants and redistributing it among less privileged families is gradually catching on. After having overcome various challenges, and met with the resistance of some chefs, Jean-François Archambault set up The Chef Table (La Tablée des Chefs) in 2002. * Joyce Rock comes from Montreal but has been living in Vancouver for over ten years. She noticed that there were many people living on the streets of this big city who were suffering from malnutrition. So she set out to help them. As the Director of the Downtown Eastside Neighbourhood House in Vancouver, Joyce’s mission was to ensure that people were provided sufficient, safe and nutritious food. With her unique approach to tackling issues, she is sympathetic towards the impoverished, whilst respecting their dignity. * Freeganism is a movement that appeared in the United States during the 1990s. It is made up of people who share an ideology: to reduce food waste and peacefully denounce consumerism. Dumpster divers pick out and consume food that has been discarded by restaurants, supermarkets, factories and even the occasional household. By salvaging food, they reduce waste and damage to the environment. Some Freeganists also do their bit for the cause by offering meals to the underprivileged.
