In the Mohawk community of Kahnawake, Quebec, Rich Francis discovers a prehistoric fish when he visits Eric “Dirt” McComber, a local fisherman, hunter and lacrosse coach, who shows Rich how he smokes and candies sturgeon. He takes Rich out on the river to learn how these very large fish are harvested. He also meets with Brooke Rice who studies food security and nutrition at McGill University. Together, they teach Rich about the history and relevance of sturgeon to the Mohawk of the St. Lawrence River regions. Rich brings his new learnings to the firepit, creating some new sturgeon dishes.

In the Wild Game Series, chef Rich Francis explores indigenous communities across Canada and traditional and modern methods of harvesting and preparing the food that has shaped their cultures over millennia.
