Rich Francis visits the Inuvialuit community of Inuvik, NWT, where he’s eager to learn about a unique food source harvested on Turtle Island - the Beaver! He visits Elder and trapper Big John Jerome who still prepares beaver the traditional way. He also visits Doug Esagok, who traps beaver for its meat and pelts. Over a meal of beaver tail, he learns how this food source has complemented the Inuvialuit’s diet through centuries. On the estuaries of the MacKenzie River, Rich sees how beaver is trapped, harvested, and prepared. We hear about the history and relevance of beaver to the Inuvialuit of the Beaufort. Rich brings his new learnings to the firepit to create some exciting Beaver dishes.

In the Wild Game Series, chef Rich Francis explores indigenous communities across Canada and traditional and modern methods of harvesting and preparing the food that has shaped their cultures over the millennia.
